Matcha Green Tea has a slightly bitter taste but combined with a sweet filling, it is the best combination ever.
For macarons
- 1 egg white
- ¼ cup granulated sugar (30 g)
- ¼ cup almond flour (30 g)
- ⅓ cup of powdered sugar (40 g)
- 1 teaspoon matcha tea
- To fill
- ¼ cup of cream cheese, room temperature (50 g)
- ½ cup icing sugar (70 g)
- 1 teaspoon of milk
How to prepare macarons
In a bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form. Add ½ of the sugar and with the mixer continue beating until the egg whites are stiffly beaten. Repeat with the last ½ of the sugar, beating until the whites are bright and fluffy.
Using a fine mesh strainer, sift the almond flour and icing sugar and combine them in the bowl with the egg whites.
Preheat the oven to 180˚C.
Using a pastry bag, create the macarons on a baking tray lined with baking paper. Leave the biscuits to rest until they are no longer wet to the touch and a skin forms on top (up to 1 hour).
When the biscuits are dry to the touch, bake them for 15 minutes.
While resting, prepare the filling by mixing the cheese, powdered sugar and milk in a bowl until smooth.
Allow the macarons to rest for 10 minutes, until cool, before filling them like sandwiches.
