Lively, ripe pineapple is combined with sweet, golden mango. In combination with organic green Sencha tea it creates a unique taste experience. We chose this organic tea to be included in the delicious Madeleines recipe.
Ingredients for a mould of 12 madeleines
- 1 egg
- 60g of sugar
- 50 g butter plus a small amount to butter the mould
- half a teaspoon of baking powder
- 60 g flour 00
- 1 level tablespoon of icing sugar, plus some for dusting the surface
- one teaspoon of organic Sencha green tea
- 1 pinch of salt
How to prepare fragrant organic green tea Madeleines with Sencha Mango and Pineapple
In a bowl, beat the egg with the pinch of salt and add the sugars. Stir with a whisk, making the mixture quite foamy.
Add the melted butter and sifted flour with baking powder, stirring constantly with a whisk. Then add the tea, crumbled by hand or in a small mortar. Once all the ingredients have been well mixed and a soft, fluid mixture has been obtained, grease and lightly flour the mould and pour about three quarters of the mixture into the cavities.
Place the mould in the refrigerator to rest for about an hour. When about 45 minutes have passed, turn on the oven and bring it to a temperature of 180°. After this time, put the oven in a ventilated oven for about 10 minutes. As soon as the madeleines are golden brown, remove them from the oven.
Leave them to cool completely. Serve them lightly with icing sugar
