Featuring the subtle aromatic flavor of Matcha and the tanginess of lime, this scrambled egg recipe is perfect for breakfast or brunch.

- 8 eggs
- 2 spring onions
- 1/2 teaspoon salt
- 2 teaspoons of butter
- 1/4 -1/2 teaspoon Matcha Aiya Everyday Izumi
- 1 lime
How to prepare scrambled eggs
Slice the spring onions.
In a medium bowl, crack the 8 eggs and beat them until well beaten. Stir in ½ teaspoon salt and plenty of freshly ground pepper.
In a skillet, heat 2 tablespoons of butter over medium heat. Tilt the pan to make sure the entire pan is coated with melted butter. Add the spring onions and sauté for about 1 minute to soften slightly. Pour in the eggs.
Over medium heat. When the eggs just begin to set, use a flat spatula to crack the eggs, creating folds. Remove them from the heat just before they are fully hardened.
To serve, place the eggs on a plate. Garnish with a sprinkle of Matcha and a few drops of lime juice.
