Pumpkin soup with green tea

How to find comfort during the cold winter months? With this delicious green tea pumpkin soup! Green tea and pumpkin are a mouthwatering fusion of flavors.

Ingredients

  • 5 cups of water
  • Long Jing Green Tea Leaves
  • 1/2 cup yellow peas
  • 1/4 chopped onion
  • 3 garlic cloves
  • 1 cup cooked pumpkin
  • 1 teaspoon of paprika
  • 1/4 teaspoon of cumin
  • Salt and black pepper, to taste
  • Optional: decorate with sun-dried tomatoes and/or sliced jalapenos

How to prepare this delicious soup

Bring 4 cups of water to a boil then add the tea leaves and brew. Remove the leaves and add the peas. Then cook over medium heat with the lid on for 35-40 minutes, or until the peas are tender.

Allow the cooked peas to cool, then blend with the onion, garlic and cooked squash. Blend until smooth and creamy in consistency.

Pour the mixture back into the pot, add 1 cup of water and also add paprika and cumin.Cook on low heat for 10 minutes, add salt and black pepper, to taste.

Optional: decorate with sun-dried tomatoes and/or sliced jalapenos.
