Hollandaise sauce is a sauce which is served hot or cold and accompanies meat and fish dishes. It is essentially a kind of hot mayonnaise made with butter instead of oil, that is why it is particularly delicate and aromatic.

Ingredients
- 2 bunches of green asparagus
For the hollandaise sauce
- 200 g of butter
- 4 teaspoons of Jasmine Chinese Green Tea
- 4 egg yolks
- 5 cl of single cream
- juice of 1/2 lemon
- salt pepper

- 3 pots (1 large, 1 medium and 1 small);
- 1 whisk, 1 fine sieve

Asparagus preparation
Bring the water to a boil in the large saucepan. Clean and peel on the stem the asparagus with a potato peeler, drop them into the boiling water (they will be ready about 1 minute after the boil resumes). Then submerge them in ice water to preserve their color.
Preparation of the hollandaise sauce
You must first clarify the butter: melt it over gentle heat; then remove the foam that is created. Heat the clarified butter in the medium saucepan and add the tea, letting it steep for 3 minutes, whisking constantly with a whisk. Strain and keep warm.
Place yolks in small saucepan with 2 tablespoons cold water. Whisk yolks over gentle heat until mixture swells, like eggnog. Remove from heat. Add salt and pepper and gradually blend in clarified butter; add cream and lemon juice. Strain and keep warm.
Before serving, heat asparagus in boiling water for a few seconds and drain well. Serve the sauce on the side.
