Smoked in black tea in the BBQ slowly and at a low temperature for several hours, the pork shoulder acquires a unique flavour that will win everyone over at your BBQ.
Ingredients
For the brine
- 1 cup of water
- 1 cup of brown sugar
- 1 cup of salt
- 1 tablespoon mustard
- 1 tablespoon black peppercorns
- 1 cup of Organic Red (Black) Tea Purple Bud
Mix all the ingredients together in a pot and bring to the boil. Add the pork shoulder to the brine and leave it to stand for at least 8 hours.
Black tea smoking
- 1 cup of black tea
- 5 cups of white sugar
- 5 cups of salt
Procedures
Mix the ingredients in a bowl, then make a packet out of foil, pierce the packet at the top.
Place the packet in the top of your BBQ, lay the meat on the grill and leave to cook over a medium-low heat for 4 to 5 hours.
The long lead times are well worth it. The pork shoulder will be succulent with a unique smoky tea aroma.
