Matcha tea green pancakes

Pancakes are typical American breakfast pastries and are traditionally served with maple syrup, but also with fresh fruit, honey or jam. They resemble crepes, but are thicker and more spongy in texture. Compared to traditional pancakes, the unusual green colour of these pancakes comes from Matcha tea.

Ingredients

For 6 pancakes

  • 2 eggs
  • 80g sugar
  • 85g flour
  • 30 g seed oil
  • 30g milk
  • 10 g powder of Matcha Tea

For decoration

  • maple syrup
  • or wildflower honey
  • or strawberries, blueberries, cream… and anything else you like!

Preparation of matcha pancakes

To make these pancakes, whisk the egg whites with the sugar in a bowl until frothy. Add the egg yolks, flour, matcha, milk and oil.

Mix well from the bottom upwards with the help of a spatula until the mixture is smooth and homogeneous.

Pour a spoonful of batter onto a hot non-stick frying pan until bubbles appear on the surface. Turn the pancakes over and cook them on the other side for a few moments. Proceed in this way until the batter is done.

Serve the pancakes hot, garnishing them with whatever you like.
