Matcha Tea Halloween Cookies

It’s Halloween and what could be better than celebrating with some tea-refreshing matcha Frankenstein biscuits!

Ingredients

  • 2 cups of 00 flour
  • 1/3 cup caster sugar
  • 2-3 tablespoons of green tea powder (matcha).
  • 230 grams of softened unsalted butter
  • 1/2 teaspoon of vanilla extract

For a Halloween-style decoration

  • black and white royal icing for biscuits

Preparation

Sift the matcha and flour together. In a bowl, mix butter and sugar until light and fluffy; then add vanilla. Gradually add the dry ingredients, then form two evenly sized disks and wrap with cling film. Refrigerate for at least one hour.

Depending on personal preference, feel free to add more or less matcha to the mixture.

Preheat the oven to 180° and line the baking tray with baking paper. Roll out the dough 1 cm thick and cut it into squares. Transfer to the baking tray and place in the freezer for 10-15 minutes before baking.

Bake for about 15-16 minutes, until the edges begin to brown. Allow to cool before decorating.

Using piping bags filled with black and white royal icing, give your imagination free rein to decorate the biscuits.
