Matcha Crepes are fun-to-make desserts that you can pair with anything you like, we tried them with berries and fresh whipped cream. – A perfect treat for any time of day!
Ingredients
For the crepes:
- 2/3 cup of 00 flour
- 1 teaspoon of Matcha tea
- A pinch of salt
- 1 large egg
- 1 cup of milk
- Butter, for buttering
Whipped Cream:
- 1/2 cup of whipping cream
- 1 teaspoon sugar
To decorate:
- Fresh raspberries
- Chocolate Curls
- Icing sugar
How to make Matcha Crepes
Combine the flour, salt and Matcha powder in a bowl and stir.Add the egg and half the milk. Beat until smooth, then mix in the rest of the milk.
Melt 1/2 tablespoon butter in a crepe pan (or nonstick skillet) over medium-high heat.
Pour about 1/3 cup of batter into the center of the pan, and immediately tilt the pan, allowing the batter to fill it up nicely. Do this as quickly as possible. Cook the crepe for about 15-30 seconds (until the edges begin to pull away from the sides), then use a spatula to flip the crepe over and cook for another 15 seconds or so on the other side.
Remove the crepe from the pan and place it on a plate. Repeat until all the batter is used up, making sure to swirl the pan with butter if necessary.
Cover the crepes while you prepare the whipped cream. Add the whipping cream and sugar to a mixer. Beat on high until soft peaks form (about 5 minutes). To serve the crepes: fold 1-2 crepes into triangles or any shape of your choice. Garnish with the whipped cream and berries. Sprinkle with chocolate curls and a good dusting of powdered sugar.
