A super soft and super fragrant cake, the citrusy aroma of lemon goes perfectly with our bergamot tea.
It is suitable for both breakfast and a delicious snack.
Ingredients (for 4 people):
For the cake
180 gr white flour “00
90 ml sunflower seed oil
150 gr sugar
80 ml water
1 tablespoon red (black) tea with bergamot Fo Shou Gan
1 sachet of baking powder
1 untreated lemon
For the syrup
juice of 1 lemon
180 gr icing sugar
How to prepare lemon cake scented with bergamot tea
In a small saucepan heat water and insert a tablespoon of your favorite black tea leaves and let steep 5-10 minutes. Preheat the oven to 180 degrees F. In a bowl, pour the eggs, sugar, salt and beat them 5 minutes with a whisk.
Grate the lemon zest and add it to the mixture, then pour in the oil and tea, after passing it through a strainer, and continue to blend everything with the blender.
Finally, add the flour and the sifted baking powder. Pour everything into the buttered and floured mold and bake in the oven for 30 minutes (always check the cooking with a toothpick).
Meanwhile, make the syrup by putting the lemon juice and powdered sugar in a small saucepan and stir until all the sugar is completely dissolved.
As soon as the cake is ready take it out of the mold, pierce it with a skewer and pour the syrup on the cake and then leave it to cool completely and at will, when the cake is completely cold, sprinkle it with powdered sugar.
